CLARKS STICKY PLUM ROASTED VEGETABLES WITH TAHINI DRESSING TOASTED PINE NUTS AND THYME

Ingredients:

  • For the dressing 1/3 cup tahini paste¬†3 tbsp lemon juice 1 clove crushed garlic 1 tbsp honey
  • 4 courgettes
  • 4 carrots
  • 4 parsnips
  • 2 Sweet potato
  • 2 tbsp olive oil for dressing
  • salt and pepper to season
  • 25ml CLARKS Sticky Plum Sauce
  • Handful toasted pine nuts
  • Handful fresh thyme

 

Method:

  • To make the dressing: combine all the ingredients in a bowl and mix until smooth. Preheat the oven to 200 Cut the vegetables into even shaped batons lightly drizzle with olive oil and season with salt and pepper Drizzle with sticky plum sauce and stir to cover well. Add roughly chopped thyme and roast in the oven until caramelised and slightly charred. Once removed from the oven sprinkle with toasted pine nuts and serve with the tahini dressing.
